I visited Adelaide in the school holidays a fair bit as a kid and I always remember we loved going to:
- The ice arena was always a favourite of my siblings and mine. The snow play sessions they run these days look like a lot of fun http://icearena.com.au/
- The Fairy Garden in Hahndorf, they have a magical fairy garden and make great fairy and garden figurines https://www.thefairygarden.com.au/
- The SA Aquatic Centre has 2 massive waterslides and they run fun inflatable courses on Fridays and weekends during school holidays http://www.saaquatic.ymca.org.au/
- Whenever we had free time we'd wander around the Adelaide Botanic Gardens. Check out the waterlily pavilion and conservatory. They run free guided tours and also have a great school holiday program https://www.environment.sa.gov.au/botanicgardens/whats-on/180416-april-school-holidays

I took my nephews to the SA Circus Centre in Bowden for a cirkidz class, they loved the aerial trapeze, trampolining & foam pit. A good way to get them active & out of the house.

If the kids are animal lovers I recommend Goolwa Animal Farm, it's open every day 10am-4pm & you can do pony rides and pet all kinds of farm animals.

Adventurous things I like to do with the kiddies in school holidays include go-karting (http://www.kart-mania.com.au/), Mega Adventures sky challenge and mega bounce (https://megaadventure.com.au/activities/) or pumpt skate park in Richmond.
When the kids are littler the Penfield Park Railway or Adelaide Zoo are always a hit too.
